The structure common to all types of native collagens is a triple helix of intertwined polypeptides chains of very high molecular weight (300,000 Da). The three chains are built by our own cells by linking numerous amino acids together, such as glycine. The association of several helices then forms solid fibers that reinforce the structure of our body.
The difference between the types of collagens lies mainly in the sequence and binding of the different peptides. For example, type I collagen, which is the most abundant in our body: it is found in our bones, our skin, our tendons, and even our internal organs, is made up of two identical polypeptides chains and one different chain. Whereas type II collagen is made up of three identical chains.
